three weeks ago I was 50kg but I was extremely stressed and binged and skipped the gym. I'm only 5'1 now I'm 56kg? i know weight loss isn't linear but I've gained everything back plus more I'm so frustrated

Don’t only think short times, think long term goals. This is a lesson, get back to your nutrition plan and workout routine progressively, you will return to your previous weight.

For my New Years resolution this year, I want it to be a goal I can actually stick to and achieve. I don't want to overwhelm myself with too many goals at once. If I want to get thinner and improve my appearance overall, should I focus on eating better/less or an exercise regime?

Eat better and add workout at least once or twice a week.

But like you said, don’t overwhelm yourself with too many goals at once. You have to build habits by making baby steps. On average, it takes 21 days to build a new habit.

An example of a small habit: eat a fruit and drink two cups of water after you wake up.
